Washed mild like the Colombia with good body and lushness in the west (Oaxaca and part of western Chiapas) and piquant acidity and zest in the Central area (Chiapas). Mainly small farmers with some large plantations in the Veracruz area. A very versatile coffee that can be used in many applications with great success.
